(inorganic chemistry) An ionic compound made up of aluminium cations (Al³⁺), sodium cations (Na⁺), and phosphate anions (PO₄³⁻) in the ratio of 1:3:2, respectively. Other ratios are possible and some combinations also contain hydrogen and/or water molecules and/or HPO₄²⁻ as well. It is used in baking as a leavening agent for making sponge cakes, crumpets.
